Cheese & Chutney Toasties

Ingredients: 

4 slices of Sourdough 

Supreme Brinjal Chutney 

1 cup shredded mozzarella 

Chopped coriander 

Butter 

Rocket leaves 

Method: 

Butter one side of the sourdough slices. Place the slices of sourdough butter side down. Spread all slices generously with Brinjal Chutney. Add ½ a cup of cheese on 2 slices of sourdough. Sprinkle some coriander then place the remaining slices (chutney side down) on top. Heat a frying pan over low heat. Place the toasties in the pan then cover with a lid. Toast both sides until golden and crisp and the cheese is fully melted. Slice in half and serve with rocket
