Hot & Spicy Chicken Burgers



4 chicken breast 

500 ml buttermilk 

¼ cup Supreme Hot & Spicy Chicken Fry Mix 

Oil to deep fry 

2 cups Supreme Hot & Spicy Chicken Fry Mix 

Brioche buns, toasted 

Finely sliced lettuce 

Cheese slices 


Sliced tomatoes 

Sliced red onions 




Filet the thicker end of the chicken breast so the whole chicken breast is one thickness. 

Into a bowl, add buttermilk and ¼ cup of hot & spicy chicken fry mix. Whisk well then add in the chicken. Mix well to ensure the chicken is coated evenly in the buttermilk. Cover and marinate in the fridge overnight or for a minimum of 4 hours.

Heat enough oil to deep in a large pot over medium-high heat. 

Add 2 cups of hot & spicy chicken fry mix into a shallow dish.

Take a piece of marinated chicken and allow excess marinade to drip off. Press into the chicken fry mix to coat evenly. Shake off excess and gently place into the hot oil. Fry until cooked through and golden on both sides. Drain the chicken on a cooling rack. Repeat with remaining chicken. Add cheese slices on top of the  chicken and place under the grill to melt. 

To assemble: Spread mayonnaise on the top and bottom of the buns. Pile lettuce on the base, top with sliced tomato, sliced red onions, then the chicken, gherkins and put the lid on. Serve immediately.
