Hummus with Beef & Za’atar Pitta Chips

INGREDIENTS

Beef:
2 tbsp olive oil
250g beef mince
1 small onion, finely chopped
½ tsp Supreme Garlic Powder
1 tsp Supreme Smoked Paprika
½ tsp Supreme Cayenne Pepper
½ tsp Supreme Cumin Powder
½ tsp Supreme Coriander Powder
¼ tsp Supreme Cinnamon Powder
Salt to taste

Hummus:
400g Supreme chickpeas tin, drained
1/4 cup water
2 garlic clove
Juice of 1 lemon
3 tbsp tahini (sesame paste)
2 tbsp extra virgin olive oil
Salt to taste
For the Za’atar pita chips
⅓ cup olive oil
4 tbsp Za’atar
3 Pita bread

Garnish:
Chopped parsley
Toasted pine nuts
Extra virgin olive oil

METHOD

Beef:
Heat a medium frying pan over medium-high heat and add olive oil.
Add onion and cook until translucent. Then turn up the heat to high, add beef mince, garlic powder, smoked paprika, cayenne pepper, cumin powder, coriander powder, cinnamon powder and salt. Cook and break up the mince into small pieces, until browned and cooked through. Then set aside.

Hummus:
Place all in ingredients for hummus in a food processor and blend until smooth. Check seasoning and set aside.

For the Za’atar pita chips:  Preheat the oven to 200°c.
Cut each pitta into 8 triangles. Place triangles on a baking tray.
In a small bowl, combine the oil and Za’atar. Brush each triangle with mixture. Bake in a preheated oven for about 5-7 minutes, or until lightly browned and crisp.

Assembly:
Spread hummus on a plate and using the back of a spoon create swirls.
Top with beef mince, scatter over the pine nuts and sprinkle with parsley. Finish with a drizzle of olive oil. Serve with Za’atar pita chips.
