Chicken Fajita Quesadillas



2 tbsp Zaytuna Olive Oil
400g chicken breast, cut into thin strips 
½ medium red pepper, thinly sliced 
½ medium green pepper, thinly sliced 
½ medium yellow peppers, thinly sliced
1 medium red onion, sliced, thinly sliced 
1 tbsp Supreme Onion Powder
1 tbsp Supreme Garlic Powder 
1 tbsp Supreme Smoked Paprika 
1 tbsp Supreme Cumin Powder
1 tbsp Supreme Cayenne Pepper Powder 
1 tsp Supreme Kashmiri Chilli Powder
1 tsp Supreme Chilli Flakes 
½ tsp Supreme Coarse Black Pepper
1 tbsp oregano
Salt to taste  
Chopped coriander 
Tortilla wraps 
Grated cheddar & mozzarella 


Heat oil in a pan over medium heat. Add chicken, veggies and all the herbs and spices. Mix well and cook until chicken is cooked through. Garnish with chopped coriander and set aside. Heat a large frying pan over medium heat. Heat one side of the wrap then flip over and sprinkle over desired amount of cheese all over the wrap. Once the cheese starts to melt, spoon over chicken mix on 1 half of the wrap. Then fold over the other side to make a quesadilla. Once one side is golden, flip and cook until golden. Slice and serve.
