INGREDIENTS
15 lamb ribs
Spice Rub:
¼ cup Supreme Smoked Paprika
¼ cup Supreme Onion Powder
1 tbsp Supreme Coarse Black Pepper
1 tbsp Supreme Garlic Powder
1 tsp Supreme Cumin Powder
4 tbsp brown sugar
1 tsp Supreme Chilli Powder
2 tbsp Salt
BBQ Basting Sauce:
1 cup ketchup
¼ cup oil
¼ cup soy sauce
¼ cup balsamic vinegar
2 tbsp brown sugar
3 tbsp spice rub
Garnish:
Chopped chives
METHOD
In a bowl, mix together all the ingredients for the spice rub and set aside. Preheat oven to 180C. Generously coat each rib with the spice rib and on a baking tray. Cover with foil and bake in preheated oven for 1 1/2 – 2 hours or until fall apart tender. In the meantime, in a bowl, mix together all the ingredients for the basting sauce and set aside. Finish the ribs on a preheated bbq; place them on the grill and baste them with the sauce until sticky and caramelized. Garnish with chopped chives and serve immediately.
