Dan Dan Noodles



Beef Topping:
¼ cup oil
500g beef mince
¼ cup hoisin sauce
1 tsp Chinese five spice
1 tbsp rice vinegar
1 tbsp dark soy sauce
1 tbsp Supreme Garlic Paste

¼ cup tahini
⅓ cup dark soy sauce
½ cup Chilli Oil (Sichuan) (recipe can be found on supreme-ingredients.com)
1 tbsp Supreme Garlic Paste
2 tbsp sugar
1 tbsp rice vinegar
½ cup hot water (you can also use the hot noodle water for this if you’re using dried noodles)

Other Ingredients:
375g noodles, boiled (medium thickness)
2 pak choi, blanched
3 large Spring onions, finely sliced
½ cup Supreme Blanched Supreme Peanuts, toasted and crushed

Beef Topping:
Heat oil in a frying pan over medium-high heat, add beef mince, break with a spatula and cook until all excess moisture has evaporated. Stir in hoisin, Chinese five spice, rice vinegar, dark soy sauce and garlic paste. Cook for 2-3 minutes or until any excess moisture has evaporated. Remove from heat and set aside. Now make the noodles as per package instructions. In the meantime make the sauce.

In a bowl, mix together all ingredients for the sauce.

Divide the sauce between 6 bowls (or 4 depending on your serving size). Then add the noodles, blanched pak choy and beef mince. Finally, garnish with a sprinkle of crushed peanuts and spring onions.
