Simple Chicken Curry



1 whole chicken cut into 12 pieces
½ cup oil
1 large onion, chopped
5 Supreme Black Peppercorns
1 Supreme Bay Leave
2 2 inch Supreme Cassia Bark
2 Supreme Cloves
2 Supreme Green Cardamom
1 ½ tbsp Supreme ginger garlic paste
2 tsp Supreme Coriander Powder
2 tsp Supreme Cumin Powder
1 tsp Supreme Turmeric Powder
2 tsp Supreme Chilli powder
1 cup chopped tomatoes (fresh)
Salt to taste
2-3 green chillies
Chopped coriander


Add oil and whole spices in a pot over medium heat. Once spices release their aromas and onions and saute until golden brown. Add ginger garlic paste, cook for a few minutes then stir in all the ground spices and also cook for a few minutes. Add a splash of water to stop spices from burning. Now add chopped tomatoes, stir, cover and cook for 10 minutes. Once the oil has separated add chicken, green chillies and ½-1 cup water (depending how soupy you want the curry). Cook uncovered for 5 minutes then stir, cover and cook on low heat until chicken is fully cooked. Check seasoning, garnish with chopped coriander and serve steamed basmati rice or chapatis.
