Baked Gnocchi

INGREDIENTS

400g gnocchi
2 tbsp oil
1 medium onion, finely chopped
1 can Supreme Tomato Tin
1 tsp Supreme Chilli Flakes
1 tsp Supreme Garlic Paste
Salt to taste
½ tsp Supreme Coarse Black Pepper
½ tsp Sugar
1 tbsp balsamic vinegar
Handful of fresh parsley, chopped
Fresh mozzarella ball cut into small pieces

Garnish:
Red chilli, sliced
Parsley leaves

METHOD

Preheat oven to 200°c. Heat oil in a pot over medium-high heat. Add chopped onions and sauté until soft. Stir in garlic paste, chilli flakes, salt and pepper. Cook for 1 minute then add chopped tomato tin, gnocchi, sugar and balsamic vinegar. Stirring occasionally, simmer until gnocchi is soft and the sauce has thickened. Check seasoning and stir in chopped parsley. Transfer the gnocchi to a oven proof dish and top with mozzarella pieces. Bake for 15-20 minutes until mozzarella has melted and turned golden. Remove from oven, garnish with parsley leaves and chilli slices serve.
