Sweet Potato Kheer



¼ cup ghee
2 inch piece of Supreme Cassia Bark
3 Supreme Cloves
5 Supreme Green Cardamom Pods
800g sweet potato, peeled and cut into 1 inch pieces
1 cup water
1 cup sugar
1.5 Lt milk
Pinch of salt
¼ cup Supreme Charoli


Heat ghee in a deep pot over medium-high heat and add cassia bark, cloves and green cardamom pods. Once the aromas release, add the sweet potatoes and sear until edges are golden. Now add water and sugar, stir well and cook for 5 minutes. Add milk, pinch of salt and bring to a boil, then turn the heat down to low and simmer until the sweet potatoes are tender. Add charoli and simmer for an additional 5minutes then spoon out a cereal bowl amount of sweet potato. Use the back of a spoon to mash them then add back to the milk. This will slightly thicken the milk. Simmer for another 15 minutes then serve.
