
Ingredients:
100g caster sugarÂ
100g butter- room temperatureÂ
200g Supreme Almond Powder
55g corn flourÂ
100g Supreme Almond- finely groundÂ
1 tsp baking powderÂ
Pinch of sea saltÂ
2 tbsp orange zestÂ
1 large egg- whiskedÂ
½ cup icing sugar
Extra icing sugar for dustingÂ
Method:Â
Into a large mixing bowl add caster sugar, almond powder, corn flour, finely ground almonds, baking powder, sea salt and orange zest.
Mix together until well combined. Add butter and use your fingertips and rub the butter into the dry ingredients to make a light crumbly mixture.
Add the whisked egg and mix until well combined and a soft dough forms. Chill the dough in the fridge for 30- 60 minutes.Â
Preheat the oven at 170°c and line a large baking tray with greaseproof paper.
Take 2 tbsp of the chilled dough and roll into a ball. Then roll the ball in icing sugar and place on a lined baking tray, leaving space between them. Repeat with remaining dough balls. Gently flatten each ball with your fingertips and top with a pinch of orange zest. Bake in a preheated oven for 12-15 minutes or until the edges are golden. Cool completely then dust with icing sugar.Â
