Almond filling:
120g softened butterÂ
1 ½ cup Supreme Ground AlmondÂ
Âľ cup sugar
4 ½ tbsp plain flour
3 tbsp almond extractÂ
1 ½ tsp vanilla extract
3 large eggsÂ
Pinch of saltÂ
Crumble mixture:Â
200g sugarÂ
300g plain flourÂ
225g room temperature salted butterÂ
1 tsp of baking powderÂ
50g oatsÂ
Pinch of saltÂ
other ingredients:
100g Supreme Almond FlakesÂ
Icing sugarÂ
Method:Â
Preheat the oven to 180°c and grease and line a 9 inch x 13 inch baking tray.Â
Add all the ingredients for the almond filling into a bowl and whisk together until well combined.
In a bowl combine sugar, flour, butter, oats, baking powder and salt. Use your fingertips and rub the butter into the dry ingredients to make a fine crumbly mixture. Pat ¾ of the dough into the prepared tray. Add the almond filling and spread evenly. Then crumble remaining dough over the almond filling. Sprinkle over almond flakes and bake at 180°C for 35-40 minutes or until the top is golden brown. Remove from the oven and set aside to cool. Slice, dust with icing sugar and serve.
