Masala Scrambled Eggs



6 eggs
¾ cup chopped onion
½ cup chopped tomato
½ cup chopped fresh coriander
2 tsp chopped green chillies
Salt to taste
2 tsp Supreme Cumin Powder
2 tsp Supreme Coriander Powder
½ tsp Supreme Turmeric Powder
1 tsp Supreme Chilli Powder
Big knob of butter


In a bowl, whisk together eggs, salt to taste, cumin powder, coriander powder, turmeric powder and chilli powder. Then add onions, fresh coriander, tomatoes and green chillies. Melt butter in a non-stick frying pan over medium heat. Once the butter begins to bubble, swirl the pan then give the eggs a final whisk and pour into the pan and leave to cook for about 30 seconds (or until it begins to set). Gently stir egg mixture from outer edges into the centre, until eggs form creamy curds. Remove from heat when the eggs are set, but still moist. Serve immediately with paratha.
