Ingredients:
3 cups Supreme White Atta
1 ¼ cup boiling water
⅓ cup oil
Salt to taste
Cheese filling:
4 cups grated cheese
¼ cup finely chopped coriander
1 tbsp Supreme Garlic Powder
1 tbsp Supreme Cumin Powder
1 tbsp Supreme Chilli Flakes
.
Oil/ ghee
Pickle/ achaar
Method:
Add flour, salt, and oil into a bowl. Mix together then pour in boiling water. Use a spoon mix to form a shaggy dough. Then use your hands to knead into a smooth dough. Cover and set aside.
Prepare the cheese filling: add the ingredients for the cheese filling into a bowl and mix well. Then set aside
Heat a tawa or non-stick frying pan over medium heat.
Divide the dough into 16 balls. Flour the dough balls & roll into 5-6 inch circles. Place 1/2 cup of cheese filling across 1 sheet of dough (leaving 1 inch clear around the edges) then place another rolled sheet of dough on top. Gently press on the edges to seal. Lightly dust with more flour and gently roll to fuse the paratha together. Gently transfer paratha onto a hot tawa or frying pan and cook both sides, drizzling some oil or ghee on each side, until golden brown spots appear. Serve hot with pickles or achaar.
