Potato Bravas

INGREDIENTS

2 tbsp oil
1 onion, finely chopped
1 tbsp Supreme Minced Garlic
1 ½ tsp Supreme Smoked Paprika Powder
1 ½ tsp Supreme Cayenne Pepper Powder
Salt to taste
½ tsp Supreme Coarse Black Pepper
1 tbsp sugar
1 tin Supreme Plum Tomatoes
⅓ cup premium finest tomato paste
1.5 kg white potatoes, peeled and cut into 1 inch pieces
Fried Eggs
Mayonnaise
Chopped parsley
Oil to deep fry

METHOD

Heat oil in a pot over medium heat. Add onions and garlic paste and sauté until soft. Add smoked paprika, cayenne pepper, salt to taste and coarse black pepper. Sauté for a minute then add plum tomatoes, tomato puree and sugar. Simmer for 20 minutes then use a hand blender to blend into a smooth paste. Simmer on low heat, using the smallest burner. Heat enough oil over medium-high to deep fry. Deep fry potatoes in batches until golden and cooked through. Transfer the potatoes to a plate lined with paper towels to cool, and sprinkle with salt to taste. To serve, toss potatoes in the sauce, drizzle with mayonnaise, top with fried egg and chopped parsley.
