INGREDIENTS
1 tbsp oil
1 tbsp butter
1 red onion, thinly sliced
1 tsp Supreme Garlic Paste
3 sausages, cut into chunks
dash of balsamic vinegar
Dash of Worcestershire sauce
1 tin baked beans
1 tsp Supreme Chilli Powder
½ tsp Supreme Cumin Powder
½ tsp Supreme Coriander Powder
Salt to taste
⅓ tsp Supreme Coarse Black pepper
2 eggs
Chopped parsley
METHOD
Heat oil and butter in a frying pan over medium heat. Add sliced onions, garlic paste and sausage chunks, cook until onions have softened and sausages are fully cooked through. Add chilli powder, cumin powder, coriander powder, salt, black pepper, balsamic vinegar and Worcestershire sauce cook for a minute then stir in baked beans. Bring to a simmer, then make 2 small “wells” or indentations and crack an egg into each indentation. Cover and cook over low heat until the whites are set and yolks are still runny. Garnish with chopped parsley and serve immediately
