English Muffin Sandwiches



6 beef sausages
Salt to taste
Supreme Coarse Black Pepper
Supreme Chilli Powder
Rocket leaves
Gouda cheese slices
Vine tomatoes, sliced
4 English muffins, sliced
4 fried eggs


Let the sausages defrost. Heat a large frying pan over medium heat. Squeeze out the sausage meat from the casing into the frying pan and sauté (breaking the meat up so it looks like mince) until fully cooked and meat starts to crisp up. Season with salt, coarse black pepper and chilli powder. Within the frying pan, divide the meat into 4 piles. Turn the heat low and place a slice of Gouda cheese on each pile. Sprinkle some water and cover with a lid. In the meantime, fry the eggs and butter and toast the sliced muffins. To assemble; add rocket leaves and sliced tomatoes on a sliced toasted muffin (bottom). By this time the cheese will have melted, so add a pile (of meat & cheese) onto the sliced tomatoes. Now add a fried egg seasoned with salt and black pepper and lastly top with a muffin (top). Repeat with remaining ingredients. Serve immediately with tea or coffee.
