Almond Pinwheels



80g softened butter 

1 cup Supreme Ground Almond 

½ cup sugar

3 tbsp plain flour

2 tbsp almond extract 

1 tsp vanilla extract

2 large eggs 

Pinch of salt 

1 sheet of ready rolled puff pastry

Egg/ milk wash 

Supreme Almond Flakes

Icing sugar 


Add butter, ground almonds, sugar, plain flour, almond extract, vanilla extract, eggs and salt into a mixing bowl. Whisk together until well combined. 

Unroll the sheet of ready rolled puff pastry. Add the almond mixture on top and spread evenly. Gently roll the pastry tightly and chill in the freezer for 30 minutes. Preheat the oven to 180°c and line some baking trays. Take a sharp knife and cut the roll into ½ inch slices and carefully arrange 1 inch apart on prepared baking sheets. Lightly brush with egg wash or milk and add some flaked almonds on top. Bake for 22-25 minutes or until puffed and golden. Allow to cool slightly then generously dust with icing sugar before serving.
