Egg Fried Rice

INGREDIENTS

1 cup Supreme Basmati Rice, cooked & cooled
⅓ cup oil
3 eggs, whisked
2 green chillies, sliced
1 tsp Supreme Ginger Garlic Paste
2 packed cups of vegetables (cabbage, bell peppers, cabbage, sweetcorn, spring onions)
1 tbsp soy sauce
Salt to taste
½ tsp Supreme Coarse Black Pepper
Pinch of sugar

METHOD

Heat oil in a wok over medium-high heat. Once the wok is hot, add the whisked eggs eggs and scramble them for 1 minute then transfer the eggs to a dish and set aside. Add ginger garlic paste, coarse black pepper, veggies and green chillies and stir fry for 2 minutes. Add cooked rice, sugar and soy sauce into the wok and cook until the rice is heated through. If you have large clumps of rice, break them apart with the back of your spatula. Add scrambled eggs and salt if needed. Stir well and serve immediately.
