Tandoori Chicken Fillet



1 chicken breast, sliced across so you have 2 fillets.
¼ cup oil
¼ cup Supreme Tandoori Masala
Salt to taste
¾ cup plain flour
50g butter


In a bowl, mix together oil, tandoori masala and salt. Add chicken, mix well and marinate overnight. Remove chicken from the refrigerator 1 hour before cooking. Preheat oven to 180°c. Pour flour into a plate and coat each chicken fillet well. Add butter and enough oil to cover the base of the frying. Heat over medium heat and place coated chicken into the pan. Fry until the chicken coating is crispy and a deep golden brown. Remove from pan and place on a baking tray and bake in the oven for a further 15-20 minutes until chicken is fully cooked. Remove from oven and serve immediately.
