Ingredients:
1 large chicken breast- cut across to make 2 fillets
1 cup buttermilk
1 tsp salt
1 tsp Supreme Coarse Black Pepper
1 tbsp Supreme Garlic Paste
1 cup Supreme Original Chicken Fry Mix
¼ cup potato starch
Oil to deep fry
2 toasted burger buns
Lettuce
Sliced red onions
Cheese slices
Pickles
Mango peri peri sauce
Method:
Add buttermilk, salt, coarse black pepper and garlic paste into a bowl. Stir well and add in the chicken fillets and mix until well combined. Cover and marinate overnight in the fridge.
Combine chicken fry mix and potato starch in a shallow dish.
Take the chicken fillets and allow excess marinade to drip off then press into the chicken fry mix to coat evenly. Shake off the excess and set aside for 10 minutes.
Heat enough oil to deep in a large pot over medium-high heat.
Gently place the chicken fillets into the hot oil. Fry until cooked through and golden on both sides. Drain the chicken on a cooling rack. Repeat with remaining chicken fillet. Add cheese slices on top of the chicken and place under the grill to melt
To assemble: Spread mango peri peri sauce on the top and bottom buns. Add lettuce, sliced red onions, chicken, gherkins and finally the top bun. Serve immediately.
