INGREDIENTS
6 cod fillets
1 cup mayonnaise
1 tsp Supreme Coarse Black Pepper
2 tbsp Supreme minced garlic
Zest of 1 lemon
Salt to taste
Handful of chopped parsley
Supreme Breadcrumbs
Tartar Sauce:
1 cup mayonnaise
⅓ cup finely chopped gherkins
2 tbsp gherkin juice
1 tbsp finely chopped capers
1 tbsp caper juice
½ tsp Supreme Coarse Black Pepper
⅓ cup finely chopped shallots
METHOD
Make the tartar sauce; combine all the ingredients together. Set aside in the fridge. Preheat the oven to 180°c. In a bowl, mix together mayonnaise, black pepper, minced garlic, lemon zest, salt to taste and chopped parsley. Pour breadcrumbs into a dish. Coat each cod fillet generously in the mayonnaise mixture then coat in breadcrumbs. Place on a lined baking tray, spray with cooking oil then bake in the oven for 17-20 minutes. Remove from the oven and serve immediately with tartar sauce, salad leaves, steamed peas and crispy potatoes.
