BBQ Chicken & Cheese Buns



2 cups bread flour
2 tbsp sugar
1 tsp salt
1 egg
⅓ cup warm milk
¼ cup warm water
7 g yeast

300g chicken breast, cut into small pieces
2 tbsp oil
½ tsp Supreme Coarse Black Pepper
Salt to taste
1 tbsp Supreme Garlic Paste
1 tbsp Supreme Smoked Paprika
1-2 tsp Supreme Chilli Flakes
1 tsp Supreme Cumin Powder
½ cup BBQ sauce
⅓ cup ketchup
1 cup sliced spring onions
2 cups grated mozzarella & cheddar

1 egg, beaten
Supreme sesame seeds


In a bowl, combine warm milk, warm water, sugar and yeast. Set aside to let the yeast activate. In another bowl, mix together the flour, salt and egg. Once the yeast has activated add the mixture to the flour and mix until combined. Knead until you form a soft dough then cover and set aside to prove for one hour or until the dough has doubled in size. In the meantime, make the mixture; heat oil in a pot over medium heat. Add chicken, garlic, salt and coarse black pepper. Mix well and cook until all excess water has evaporated. Now add smoked paprika, Chilli flakes and cumin powder. Cook for 1-2 minutes the stir in BBQ sauce and ketchup. Turn the heat down to low and simmer for 5-8 minutes. Remove from heat and set aside to cool. Once cooled, stir in spring onions and grated cheese. To make the buns, remove the dough from the bowl and divide into 12 equal portions. Roll each portion out and fill the middle with a heaped tbsp of filling. Fold and pinch the edges in to form a ball and place on a lined baking sheet. Repeat with remaining dough, then cover with the clean tea towel and set aside to prove for 30 minutes. Preheat the oven at 180°c. Once buns have proved, brush with egg and sprinkle some sesame seeds. Bake for about 20 minutes or until golden and cooked through. Serve warm or at room temperature.
