INGREDIENTS
¼ cup oil
600g chicken breast cut into small pieces
1 cup finely chopped mixed coloured peppers
1 cup sweetcorn
1 cup finely chopped onions
1 tbsp Supreme Garlic Paste
Salt to taste
1 tbsp Supreme Garlic Powder
1 tbsp Supreme Onion Powder
1 tsp Supreme Coarse Black Pepper
1 ½ tbsp Supreme Cayenne Pepper
2 tbsp Supreme Smoked Paprika
½ cup ketchup
¼ cup BBQ sauce
1 tbsp tomato paste
400g grated mozzarella
4 garlic bread baguettes, defrosted
Chopped parsley
METHOD
Heat oil in a frying pan over medium-high heat. Add chicken garlic paste and salt. Cook chicken until fully cooked through and excess moisture has evaporated. Add garlic powder, onion powder, coarse black pepper, cayenne pepper and smoked paprika. Cook for 1-2 minutes then stir in peppers, sweetcorn and onions. Continue to cook for 4-5 minutes. Now stir in tomato ketchup, BBQ sauce and tomato paste. Turn heat down to medium-low and cook for another 5 minutes. Check seasoning then remove from heat. Slice garlic bread horizontally and stuff with chicken filling top with mozzarella and wrap each baguette in greaseproof then foil. Bake in a preheated oven at 180°c for 30 mins or until garlic bread is baked and cheese has melted. Unwrap, garnish with chopped parsley and serve. No garlic bread? Why not turn them into toasties!
