Savoury Oats

Ingredients:
1 tbsp ghee
1tbsp mustard seeds
1 tsp Supreme Chilli Flakes 
1 tsp Supreme Cumin Seeds 
10 Supreme Curry leaves 
½ tsp Supreme Ginger paste
½ tsp Supreme Garlic Paste 
1 medium red onion-finely chopped 
2 green chillies- finely chopped 
4 cups chicken/ veg stock 
1 ½ cups oats 
1 tsp Supreme Garam Masala
Salt to taste 

Optional: 
Poached eggs

Method: 
Heat a pot over medium heat. Add ghee and once melted add mustard seeds. Once they start to splutter add curry leaves, cumin seeds and chilli flakes. Stir well and cook for 2 minutes then add ginger and garlic paste. Stir well and cook for 2-3 minutes. Now add chopped red onions and green chillies. Stir well and cook until soft and golden. Add garam masala and oats. Mix well and cook until the oats are lightly toasted. Then pour in stock and stir until well combined. Add salt if needed and continue to stir until the oats thickens to your liking. Stir in chopped coriander and serve hot with a poached egg on top.
