
INGREDIENTS
200g sugar
300g plain flour
225g room temperature salted butter
1 tsp of baking powder
Pinch of salt
1 ½ cups raspberry & cardamom jam or any other flavoured jam
½ tsp Supreme Cinnamon Powder
½ tsp Supreme Nutmeg Powder
Icing sugar
METHOD
Preheat the oven to 180°c and grease and line a 9 inch x 13 inch baking tray. In a bowl combine sugar, flour, butter, baking powder, oats, salt, cinnamon powder and nutmeg powder. Use your fingertips and rub the butter into the dry ingredients to make a fine crumbly mixture. Pat ¾ of the dough into the prepared tray. Add jam and spread evenly. Crumble remaining dough over the jam. Bake at 180°C for 35-40 minutes or until the top is golden brown. Remove from the oven and set aside to cool. Slice, dust with icing sugar and serve.
