
Ingredients:
350g chicken- cut into small pieces
2 tbsp butter
4 tbsp Supreme Peri Peri Seasoning
1 tbsp Supreme Garlic Paste
Salt to taste
Juice of ½ lemon
2 tbsp peri peri sauce
2 tbsp ketchup
¼ cup double cream
300g grated mozzarella cheese
Sliced red chillies
Pickled red onions
Chopped coriander
4 Paninis- sliced
Method:
Heat a pan over medium- high heat. Add butter, once melted add chicken, peri peri seasoning and garlic paste. Mix well and cook until fully cooked through. Add lemon juice, ketchup and peri peri sauce. Stir well and cook for 2-3 minutes then add double cream. Stir until well combined then reduce heat to low and simmer for 5 minutes. Remove from heat and set aside.
Assemble the paninis: spread some cheese on one side of the panini, followed by peri peri chicken, pickled onions, red chillies, coriander and more cheese. Place the top of the panini on top.
Heat a pan over low medium heat and add the panini to the pan. Place a burger press on top. Cook the panini on both sides until golden, crispy and the cheese has fully melted.
Serve with salad and crisps.
