INGREDIENTS
4 garlic heads
½ cup Zaytuna olive oil
Pinch of salt
1.5 kg Maris piper potatoes, peeled and cut into quarters
1 cup chopped chives
⅓ cup double cream
150g butter, melted
1 ½ tsp Supreme Coarse Black pepper
Salt to taste
METHOD
Preheat oven at 18°c. Drizzle garlic with olive oil, then wrap in foil and bake in preheated oven for 1 hour. Bring a large pot of salted water to boil. Add potatoes, and cook until tender. Drain and return back to the pot. Remove the garlic from the oven, and cut in half. Squeeze the softened cloves into the potatoes along with chopped chives, double cream, butter, coarse black pepper and salt. Blend potatoes with a immersion/ hand blender until smooth. Serve immediately or place under a hot grill until golden crust forms.
