Fig, Caramelized Red Onion & Goat Cheese Flatbread



Store-bought flatbread
1 medium red onion, thinly sliced
1 tbsp butter
1 tbsp olive oil
½ – 1 tsp Supreme Chilli Flakes
⅓ tsp Supreme Garam Masala
Salt to taste
1-2 fresh fig, thinly sliced
30g soft goat cheese, crumbled
Balsamic glaze
Generous handful of rocket leaves/arugula


Preheat oven to 200°c. Melt butter in a frying pan over medium-high. Add sliced onions and sauté until soft then add chilli flakes, garam masala and salt. Stir well and cook for 1-2 minutes, then remove from heat. Lay the flatbread onto a baking tray and brush with olive oil. Then top with sauteed red onions, sliced figs and crumbled goat cheese. Bake in the oven for 12-15 minutes until the bread is browned and the cheese is slightly melted. Remove from oven. Drizzle with balsamic glaze and top with rocket leaves/arugula. Serve immediately.
