
Ingredients:
600 ml double cream
½ cup sugar
1 kg custard
2 tsp vanilla extract
1 tbsp Supreme Cinnamon Powder
Pinch of sea salt
400g digestive biscuits- broken into large chunks
4-5 bananas- peeled and sliced
3-4 digestives- finely crushed
Method:
Into a large mixing bowl add double cream, sugar, vanilla extract and cinnamon powder. Whisk together until you have soft peaks. Add custard and sea salt and mix until well combined.
Place a layer of broken digestives into a large deep dish. Then place a layer of sliced bananas on top of the digestive. Now add half of the pudding mixture on top and spread evenly. Place another layer of digestive on top of the pudding followed by the banana slices. Lastly add the other half of the pudding and spread evenly. Chill the pudding in the fridge for at least 4 hours. Top with crushed digestives just before serving.
