Chicken & Waffles



20 chicken tenders
2 cups milk
Salt to taste
½ cup Supreme Hot & Spicy Chicken Fry Mix
3 cups Supreme Hot & Spicy Chicken Fry Mix

Savoury Waffles:
2 cups plain flour
1 tsp salt
½ tsp Supreme Coarse Black Pepper
1 tsp Supreme Garlic Powder
1 tsp Supreme Onion Powder
1 tbsp sugar
75g melted butter
2 eggs
1 tbsp baking powder
1 ½ cup milk
100g red Leicester cheese, grated
3 greens onions, sliced

Greens of spring onion
Maple syrup
Oil to deep fry


In a bowl add milk and ½ cup chicken fry. Whisk together and add chicken tenders, cover and set aside in the fridge overnight. Remove from the fridge an hour before frying. Heat enough oil to deep fry over medium heat. Add 3 cups of chicken fry mix into a resealable sandwich bag. In batches add chicken tenders, seal the bag and shake to coat evenly. Gently add coated tenders into hot oil and turning them halfway through fry until golden, crisp and cooked through. Remove using a slotted spoon and drain on kitchen paper. Repeat with remaining chicken tenders. For the waffles, add plain flour, salt, coarse black pepper, garlic powder, onion powder, sugar and baking powder into a bowl and stir well. In another bowl whisk together eggs, milk and melted butter. Slowly add the wet ingredients into the dry ingredients and whisk until well combined. Now gently fold in spring onions and grated cheddar. Scoop the batter into your waffle iron in batches and cook according to the manufacturer’s directions. To serve, place fried chicken tenders on top of a waffle. Pour maple syrup over everything, garnish with spring onions and serve immediately.
