2 cups oatsÂ
ÂĽ cup melted butterÂ
Zest of one lemonÂ
1 tsp baking powderÂ
½ tsp saltÂ
ÂĽ tsp Supreme Nutmeg PowderÂ
1 tsp Supreme Cinnamon Powder
â…“ cup maple syrup/ honey
2 eggsÂ
2 cups milk
1 tsp vanilla extractÂ
1 ½ cups blueberries
Cream cheese topping:Â
200g cream cheeseÂ
ÂĽ cup icing sugar
½ cup milkÂ
1 tbsp lemon juiceÂ
Method:
Preheat the oven to 180°c and lightly grease a baking dish.Â
In a bowl mix together the oats, butter and lemon zest. In another bowl whisk together milk, eggs, nutmeg powder, cinnamon powder, baking powder, salt, maple syrup and vanilla extract. Now, slowly stir the wet ingredients into the oats. Mix well then stir in 1 cup of blueberries. Gently pour the mixture in the prepared dish. Evenly top with remaining blueberries and bake in the oven for 35-40 minutes.Â
To make the cream cheese topping simply mix all the ingredients together and keep chilled until ready to serve.Â
Serve the oatmeal bake warm or at room temperature with the chilled cream cheese topping
