Method
Make the mixture: Heat a pot over medium-high heat. Add butter and once melted add mustard seeds and cumin seeds. Stir well and cook until the spices start to splutter. Then add chicken, garlic paste, salt and coarse black pepper. Mix until well combined and cook until the chicken is cooked and excess moisture has evaporated. Add spring onions, stir well and cook for 1-2 minutes. Now add onion powder, garlic powder and paprika powder. Stir well and cook for another 2-3 minutes. Then add sweetcorn and blended jalapenos. Stir well and bring to a boil. Add sugar and milk powder. Stir well, reduce heat to low and simmer for 5 minutes. Now add cooked rice and mix until well combined. Heat the rice thoroughly then add cheese. Continue to stir until fully melted. Once the cheese has fully melted, remove from heat and stir in chopped coriander. Set aside to cool.
Prepare the coating: Prepare 3 dishes. Add 1 cup plain flour in one of the dishes and set aside. Add breadcrumbs in another and set aside. Add 1 ½ cups plain flour and 1 ½ cup water in the last dish. Whisk together until smooth and set aside.
Form the balls: form the balls once the mixture is cool enough to handle. Take 2 tablespoons of mixture into your hand. Squeeze together and roll to form a ball. Repeat with remaining mixture.
Coat the balls: first dip the balls in flour then in the flour paste then lastly coat in breadcrumbs. Repeat with remaining balls.
At this point the arancini balls can be frozen.
Fry the balls: heat enough oil to deep fry over medium heat. Once heated, gently add the balls into the oil. Deep fry on all sides until golden.
Serve hot with sauces of your choice.
