White Chocolate & Pistachio Shortbread

Ingredients: 
250g butter 
400g plain flour 
150g caster sugar 
80g Supreme Pistachio, roughly chopped 
200g white chocolate chips 
Pinch of salt 
Extra caster sugar 

Method:
Preheat the oven at 160° C. Grease and line a 9in x 13in baking tray. Into a large bowl add butter, flour and caster sugar. Rub together with your fingers until you have fine crumbs or sand-like texture. Stir in chopped pistachios, white chocolate chips and salt. Tip the mixture into the lined baking tray. Press it down using the back of a spoon until nice and compact. Score into slices and sprinkle some caster sugar on top. Bake in the oven for 30 minutes or until the edges are golden. Set aside to cool. Cut into slices and serve.
