2 tsp Supreme Cinnamon PowderÂ
2 tsp Supreme Nutmeg PowderÂ
3 tsp baking powderÂ
½ tsp saltÂ
1 cup granulated sugarÂ
½ cup brown sugarÂ
Âľ cup oilÂ
3 eggsÂ
1 tsp vanillaÂ
3 cups grated pumpkinÂ
Icing:Â
1 1/2 cups icing sugarÂ
3 tbsp waterÂ
Handful of Supreme chopped walnutsÂ
METHOD
Preheat the oven to 180°c and line a 9 X 5 inch bread tin with greaseproof paper. In a bowl, sift together plain flour, cinnamon powder, nutmeg powder, baking powder and salt. In a separate bowl mix together sugar, brown sugar, oil, eggs and vanilla until well combined. Add in dry ingredients and grated pumpkin, mix well until all ingredients are incorporated. Pour the batter into the prepared tin and bake for 1 hour or until fully cooked (insert a knife and it should come out clean). Remove from the tin and set aside to cool completely.Â
In a bowl, mix together icing sugar and water until smooth. Pour over the cooled pumpkin bread and spread evenly. Sprinkle with chopped walnuts. Let the icing set for 30 minutes before serving.Â
