Mini Corn Dogs



1 cup Supreme Cornmeal Coarse
1 cup Supreme Maida Flour and an extra 2 tbsp
2 eggs
1 cup milk
⅓ tsp Supreme Black Pepper Coarse
⅓ tsp Supreme Nutmeg Powder
2 tsp salt
1 tbsp baking powder
¼ cup sugar
8 frankfurters/ hotdogs, cut into thirds

Make the batter: in a bowl, whisk together cornmeal, maida, eggs, milk, salt, black pepper, nutmeg powder, baking powder baking and sugar. Heat enough oil to deep fry over medium heat. Coat the hotdogs in flour then dip them in the batter and then gently add to the oil and fry until golden. Repeat with remaining hotdogs. Serve hot with ketchup and mustard.
