Ingredients:
Cheesy Bread:
1 ½ cups warm water
500g bread flour
7g yeast
1 tbsp sugar
2 tbsp olive oil
1 tsp salt
200g grated mozzarella
Handful of chopped parsley
Sliced red chillies
Prawns:
1 tbsp butter
800g king prawns
1 tsp Supreme Peri Peri Seasoning
2 tbsp butter
3 tbsp Supreme Peri Peri Seasoning
2 tbsp finely chopped garlic
¼ cup water
juice of 1 lemon
Salt to taste
600ml double cream
Garnish:
Chopped parsley
Sliced red chillies
Method:
Cheesy Bread: add water, sugar and yeast into a large bowl. Mix well and set aside to bloom for 5 minutes. Once the yeast has bloomed then add salt, olive oil and flour. Mix together to make a shaggy dough then transfer to a lightly dusted worktop and knead until smooth. Place the ball of dough in a large lightly oiled bowl. Cover the bowl with a damp cloth and place in a warm place for about an hour until the dough has doubled in size.
Once the dough has risen, knock the air out and form into a ball. dust in flour then divide and form the dough into 6 balls.
Preheat the oven at 250°c. Take a ball of dough, coat it in flour, then press the ball out into a long oblong shape (about 30 cm in length). Top the dough with grated mozzarella cheese, sliced red chillies and chopped parsley. Fold the dough over and pinch to seal in the filling. Place on a lined baking tray and for 12-15 minutes or until golden and crispy.
Prawns:
Heat a pan over medium-high heat. Add 1 tbsp butter and once melted add the prawns along with 1 tsp of peri peri seasoning. Mix well and cook the prawns for a few minutes or until they start to turn pink. Remove the prawns from the pan and set aside.
In the same pan add 2 tbsp of butter. Once melted add garlic and saute until golden. Add 3 tbsp of peri peri seasoning and mix well. Cook the seasoning for 1 minute then add water and juice of 1 lemon. Stir well and simmer for 2-3 minutes then pour in the double cream. Mix well, check seasoning then reduce heat to low and simmer for 5 minutes. Now add in the cooked prawns and mix so they are coated well in the sauce. Simmer until the prawns are fully cooked. Garnish with chopped parsley and sliced red chillies. Serve hot with cheesy bread.
