
Ingredients:
2 baking potatoesÂ
Salted butterÂ
Salt & pepperÂ
1 tin Supreme Curried ChickpeasÂ
250g Grated mozzarellaÂ
Sliced spring onionsÂ
Chopped corianderÂ
Method:
Bake the potatoes:
Preheat the oven at 180°c.Â
Pierce the potatoes with a fork and wrap with foil. Bake in the oven for 1 hour or until fully cooked.
Heat the chickpeas:Â
Empty the curried chickpeas tin into a saucepan. Add ÂĽ cup of water into the tin and swirl to collect the remaining masala and add to the chickpeas. Mix well and bring to a simmer over medium heat.
Assemble the jacket potato:Â
Cut open the potato, add butter, salt, pepper and a handful of grated mozzarella. Use a fork to mash until creamy. Top the potato with curried chickpeas and grated mozzarella. Garnish with spring onions and coriander.Â
