Coconut Rice Pudding with Caramelised Pineapple



½ Supreme Pudding Rice
1 supreme Coconut Milk
2 ½ cups milk
½ cup sugar
½ tsp Supreme Nutmeg Powder
Pinch of salt
1 Pineapple, peeled and cut into small cubes


Wash the pudding rice and add to a deep pan along with the milk, coconut milk, sugar, Nutmeg Powder & salt. Stirring frequently, bring to a boil over medium heat. Reduce the heat and simmer, stirring occasionally until the milk has thickened and the rice is cooked (approximately 45 minutes to an hour). Heat a frying over high heat and add the pineapple and stir fry until caramelized. Add caramelized pineapple on top of the rice pudding and serve.
