
Ingredients:Â
½ cup Supreme Pudding RiceÂ
1 supreme Coconut MilkÂ
2 ½ cups milkÂ
½ cup sugarÂ
½ tsp Supreme Nutmeg PowderÂ
Pinch of saltÂ
1 Pineapple, peeled and cut into small cubes
Method:Â
Wash the pudding rice and add to a deep pan along with the milk, coconut milk, sugar, Nutmeg Powder & salt. Stir frequently and bring to a boil over medium heat. Reduce the heat and simmer, stirring occasionally until the milk has thickened and the rice is cooked (approximately 45 minutes to an hour).
Heat a frying over high heat and add the pineapple and stir fry until caramelized. Add caramelized pineapple on top of the rice pudding and serve.
