INGREDIENTS
250g softened salted butter
200g caster sugar
2 cups Supreme Maida (all purpose flour)
½ cup coco powder
1 tsp baking powder
1 ½ cup Supreme Dessicated Coconut
½ cup boiling water
Melted white chocolate to drizzle
METHOD
In a bowl, cream together butter and caster sugar until light & fluffy (remember to scrape down the edges). Sift in flour, coco powder and baking powder. Add desiccated coconut and water, then use a spatula to mix until well combined. Preheat the oven at 180°c. Spoon heaped tablespoons of biscuit dough onto lined baking sheets and bake for about 12-15 minutes. Remove from the oven and allow to cool. The biscuits will harden on cooling. Drizzle over melted white chocolate and allow to set.
