Chakki Atta Bread

Ingredients: 

465g Supreme Chakki Atta

1 ½ cup warm water

7g yeast

1 tsp honey

1 tsp salt

1 tbsp oil

Method: 

Add water, yeast and honey to a large mixing bowl. Mix together and set aside for 5 minutes to activate the yeast. Once activated add salt, oil and flour. Mix together until well combined then cover and set aside for 20 minutes. After 20 minutes uncover the dough and complete four stretches and folds: dip your hand in water and starting at the 12 o’clock position stretch and fold the dough towards the 6 o’clock position. Turn the bowl 90° clockwise and repeat the same. Repeat this for a total of 4 times.

Cover the dough and set aside to prove until doubled in size.

Turn the dough out onto a clean, lightly floured surface. Flatten into a rectangle shape to remove any air pockets. Fold one end of the dough & third of the way, then fold in the opposite side. Seal the seam and turn over and place the dough in a lightly greased loaf tin.

Cover & let the dough rise again in a warm place until doubled in volume, about 1 hour. Gently score the top of the bread and bake in a preheated oven at 190°c for 25-30 minutes, until the top is golden brown. Cool to room temperature then slice and serve.
