Caprese Sandwiches



2 cups fresh basil
¼ cup Supreme Pistachios
4 cloves of garlic
2 tbsp lemon juice
⅓ cup nutritional yeast
Salt to taste
¼ cup olive oil
2-4 tbsp of water

Other Ingredients:
4 ciabatta rolls (sliced across)
3 fresh mozzarella balls (sliced)
Salt & Supreme Black Pepper
Beef tomato (sliced)
Basil leave
Balsamic glaze


Add all the ingredients for pesto to the food processor and process until well combined and reaches your desired consistency. Spread pesto on both sides of the roll, add tomato slices and season with salt & pepper. Add slices of mozzarella and season again. For a toasted sandwich, place under the grill until the cheese melts. For a cold sandwich, skip this step. Top with basil leaves and balsamic glaze. Add the top and serve immediately. Store leftover pesto covered in the fridge for up to 1 week.
