INGREDIENTS
Cookies:
115g butter
75g caster sugar
130g plain flour
1 tsp almond extract
Glaze:
1 cup icing sugar, sieved
2 tbsp water
2 tsp almond extract
Supreme Almond Flakes
METHOD
Preheat oven at 190°c. Cream butter and sugar in a large bowl or in a food mixer until mixture is pale and fluffy. Sift in flour and add almond extract then bring the mixture together to form a firm dough. Using a tbsp measuring spoon, scoop the dough into your palms and roll into balls then gently flatten and place on a lined baking tray (leave space between them). Bake in the oven for 7-8 minutes (they may look very pale in colour). Carefully transfer the cookies to a wire rack to cool. Prepare the glaze by combining powdered sugar, almond extract, and water (make sure there’s no lumps). Dip cookies in the glaze and top with almond flakes.
