
Ingredients:
370g Chicken breast- cut into ½ inch piecesÂ
2 tbsp butterÂ
2 medium red onions- finely choppedÂ
2 tbsp Supreme Garlic PasteÂ
ÂĽ cup Supreme Peri Peri Seasoning
Salt to tasteÂ
1 ½ tbsp red pepper pasteÂ

ÂĽ ketchupÂ
1 cup double creamÂ
400g pasta- cooked per packet instructionsÂ
½ cup pasta waterÂ
150g grated mozzarella cheeseÂ
Chopped corianderÂ
Sliced red chilliesÂ
Method:Â
Heat a large frying pan over medium-high heat. Add butter, once melted add red onions. Saute until soft then add garlic paste. Mix well and cook for 3-4 minutes then add the chicken and peri peri seasoning. Stir well and cook the chicken until excess moisture has evaporated. Add pepper paste and mix well. Cook for 2-3 minutes then add water and continue to stir well. Cook for 2-3 minutes then add ketchup and peri peri sauce. Mix well and continue to cook for 2-3 minutes. Now add double cream and stir until well combined. Reduce the heat to low and simmer for 5 minutes. Check seasoning then add pasta and pasta water. Mix until well combined. Then add grated cheese and continue to mix well until the cheese has melted. Garnish with chopped coriander and sliced red chillies. Serve immediately.
