
Ingredients:
2 cups Supreme Gold Chakki Atta
1 tsp salt
2 tbsp oil
1 cup + 2 tbsp boiling water
Ghee
Extra atta for dusting
Method:
Add atta, salt and oil into a large shallow dish. Mix together then add 1 cup of boiling water. Mix together with a spoon to form a shaggy dough. Then mix together with your hand to form a dough ball (add an additional 1-2 tbsp of water if needed). Continue to knead until you have a soft pliable dough. Cover the dough with a damp cloth and rest for 10-15 minutes.
Roll the dough into a log and divide into 10 equal portions. Then roll into smooth balls and cover with a damp cloth.
Heat a tawa/ frying pan over medium-high.
Take a dough ball and with your hands flatten into a disk. Then dip the dough in flour and roll using a rolling pin into 7.5 – 8 inch circles.
Place the roti on the preheated tawa. Cook until small bubbles appear then flip using a spatula (the roti will be half cooked). Cook the second side a little longer (it should be fully cooked- lift the edges with a spatula to see brown spots have appeared). Then flip again and use a roti press (datta)/ or clean tea towel to lightly press the roti on all sides to help it puff up. Transfer the roti and spread with ghee. Serve warm with curry of your choice.
