INGREDIENTS
5 cups of bite size pieces of cold watermelon
1 large red onion, thinly sliced
¼ cup balsamic vinegar
Pinch of salt
1 cup roughly chopped fresh mint
1 cup roughly chopped fresh parsley
½ cup roughly Supreme Walnuts
1 cup feta cheese, cut into 2 cm chunks
2 tbsp olive oil
METHOD
In a bowl, toss together sliced red onions pinch of salt and balsamic vinegar. Cover, set aside for 2 hours then strain and discard excess balsamic vinegar. Add watermelon, balsamic sliced red onions, chopped walnuts, chopped coriander, chopped parsley, feta cheese chunks and olive oil to a serving dish, gently toss and serve.
