INGREDIENTS
1 kg white potatoes, peeled & boiled in salted water & then mashed
2 tbsp oil
½ tsp Supreme Cumin Seeds
1 tsp Supreme Mustard Seeds
½ tsp Supreme Chilli Flakes
½ tsp Supreme Chilli Powder
½ tsp Supreme Turmeric Powder
1 tsp Supreme Coriander Powder
Salt to taste
¼ cup chopped coriander leaves
1-2 green chillies thinly sliced
METHOD
Heat oil in a frying pan over medium heat. Add mustard and cumin seeds and cook until mustard seeds start to splutter. Now stir in chilli flakes, chilli powder, salt, turmeric powder and coriander powder and cook for 30 seconds. Turn off the heat and add to the mashed potatoes along with chopped coriander and sliced green chillies. Mix well and set aside to cool. This filling can be used in samosas, pies, vegetables, wraps, dosas and much more.
