INGREDIENTS

½ cup Supreme Sago Seeds, soaked overnight in water
350g potato, peeled, boiled & cooled
2 green chillies, finely chopped
1 tsp Supreme Ginger Garlic paste
3 tbsp Supreme Maida Flour
1 tsp Supreme Cumin Seeds
1 tsp sugar
2 tbsp lemon juice
¼ cup finely chopped coriander leaves
Salt to taste.

METHOD

Drain the sago and set aside. Add boiled and cooled potatoes to a bowl and mash until smooth. To the mash potatoes, add drained sago, green chillies, ginger garlic paste, maida Flour, Cumin seeds, sugar, lemon juice, coriander leaves and salt to taste. Mix everything together then chill in the fridge for 30 minutes. Remove from the fridge and shape in vadas: lightly grease your hands then using a tbsp measuring spoon take 2 tbsp of mixture and shape into ‘cutlets’. Heat enough oil to deep fry over medium heat. Gently fry the vadas in batches until golden and cooked through. Note: allow one side to turn firm and golden otherwise it may break whilst turning. Serve with chutney.
