INGREDIENTS
4 onions, finely chopped
¼ cup oil
75g butter
Pinch of salt
1 tbsp brown sugar
1 sheet ready rolled puff pastry
9 medium eggs
1 cup double cream
1 tsp Supreme Coarse Black Pepper
2 ½ cups grated mature cheddar
Salt to taste
METHOD
Heat oil and butter in a frying pan over medium-high heat. Add chopped onions, pinch of salt and brown sugar, saute until soft and caramelized. Set aside to cool. Pre Unroll the pastry and line a 10 inch pie dish. In a bowl, whisk together eggs and double cream then add caramelized onions, cheese, salt and pepper. Stir and pour the mixture into the pastry case and bake for 1 hour or until set. Serve hot or cold.
