INGREDIENTS

1/2 cup flour.
1/2 cup Supreme Fine Semolina
2 tbsp sugar
½ tsp baking powder
½ tsp instant yeast
Pinch of salt
1 ¼ cups warm water
1/4 cup Supreme Pistachios, chopped
Whipped cream
Nutella
Simple Syrup:
4 Supreme Cardamom Pods
1 cup sugar
½ cup water
1 tsp lemon juice
1 tsp Supreme Rose Water

METHOD

Prepare simple syrup. In a medium saucepan combine sugar, water and lemon juice. Bring to the boil for 10 minutes. Remove from heat and add rose water and allow to cool. In a bowl stir together flour, semolina, sugar, baking powder, yeast and salt. Add water and mix until everything is well incorporated. cover and let it rest in a warm place for  4 hours (or until thick on the top). Heat a non stick frying pan over medium heat, pour 2 tablespoons batter and cook until the batter has no visible wet spots you will notice bubbles forming on the surface (do not flip). Cover cooked qatayef with a tea towel to avoid them drying out. To fill the qatayef scoop a heaped teaspoon of the whipped cream or Nutella in the middle of the qatayef. Pinch the edges together sealing them two-thirds of the way. Dip the open side in chopped pistachios. Just before serving drizzle with syrup.
