INGREDIENTS
Filling:
750g donut peaches/ flat peaches, sliced
2 Supreme Star Anise
¾ sugar
Pinch of salt
Juice of ½ lemon
Topping:
225g melted butter
200g granulated sugar
250g plain flour
Pinch of salt
1 tsp Supreme Cinnamon Powder
½ tsp Supreme Nutmeg Powder
½ cup Supreme Almond Flakes
½ tsp baking powder
Other ingredients:
1 tbsp granulated sugar
Ice cream
METHOD
Heat a frying pan over medium-high heat. Add sliced peaches, star anise, sugar, pinch of salt and lemon juice. Stirring constantly, saute peaches until sugar fully dissolves. Remove from heat and add peaches into an ovenproof/ casserole dish. In a bowl whisk together sugar, cinnamon powder, nutmeg powder, salt and melted butter until well combined. Add in plain flour, almond flakes and baking powder, stir until well combined. Place the mixture over the top of the peaches. Spread with a spoon or with your fingers then sprinkle 1 tbsp of granulated sugar on top. Preheat the oven to 180 c and bake the cobbler for 25 minutes. Remove from the oven and let it rest 15-20 minutes before serving with ice cream.
